Media reported that with the addition of fast food, food stores and high-end restaurants, there is greater demand for plant-based meat products than ever before. A recent Nielsen report found that purchases of plant-based meat substitutes rose 279.8 percent last week after Americans were asked to stay at home during the new coronavirus pandemic.
Impossible Foods, one of the companies that develops plant-based meat products, says its mission is to one day completely replace the existing meat industry. But what if plant-based meat is not just an alternative to a market-based food that already exists, but a start to produce meat that never existed?
Patrick Brown, CEO of Impossible Foods, discussed the possibility with Nilay Patel, editor-in-chief of The Verge, on this week’s Vergecast podcast. Brown says this has always been something they want to do, and when they learn about the flavor chemistry and texture of existing meats, they know a lot about the differencebetweenbetween pork and beef and other meats, so they can create a brand new meat with the technology they already have, which can be done completely unlike anything people have eaten before.
Brown points out that the meat people eat is chosen not because they are the most delicious animals on earth, but that they can be domesticated by humans, so they have a good chance of creating something that is not available on the market. From a mission perspective, Brown says, if they want their sales to be valuable, they need to meet the premise of selling animal products at the expense of them. Right now, they need to create an easy-to-identify meat substitute, and in the future they have many ways to make them have more fun and create a variety of flavors, flavors, and more. “We don’t want our sales to complement existing meat sales.
