In countries with high salt intake, MSG may be the key to reducing dangerous salt intake, the researchers said. Replacing some salt with MSG may help lower blood pressure and protect heart health, the researchers said.
The findings were recently published in the journal Nutrition. The researchers used data from the National Health and Nutrition Survey (NHANES) on Americans’ eating habits. Based on their analysis, the team found that replacing certain salts in certain foods with MSG could reduce the overall sodium intake by 7 to 8 percent, keeping the public at a maximum of -2.3 grams or less, as health officials generally recommend.
Excessive salt intake is a major factor in the development of high blood pressure, a dangerous condition that paves the way for many chronic health problems, from vision problems to heart disease and stroke. However, the number of processed foods that use salt as a preservative can be tricky to reduce their salt intake because of the perceived poor taste of low-salt foods and the use of salt as a preservative.
MSG contains only about 12% of sodium, which means it contains only about one-third of the sodium content of regular salt. Despite this, the seasoning enhances the taste. The researchers point out that adding MSG can reduce salt content by up to 40 percent without compromising the portability of food.
“As Americans begin to understand that MSG is completely safe, I think we’re going to see a shift in the use of this ingredient instead of certain salts to improve health,” said lead researcher Dr. Taylor C. Wallace. “
